Greetings interwebs! I have mastered crepes! This morning I surprised my friend @unbornwhiskey with breakfast of savory and sweet crepes. The first have sauteed vegetarian beer brat sausage with avocado and vegan cream cheese. For breakfast desert, real cream cheese and pumpkin butter in a paper thin crepe - “like eating a holiday latte” said he. Mmm!

This eggplant Parmesan lasagna, inspired by a nearly-free sale of eggplants - was cursed. Upon pre-heating the oven, smoke and an awful smell filled the room, only to find a cheap pan was melting away in the broiler. Crisis averted, until just when the second tray of eggplants was done cooked, the glass pan exploded all over the oven. After hours slaving away to make my favorite comfort food, I was disheartened, I went to a friends to eat tacos.Tonight, I braved the oven once again with this smaller, richer version as as half the eggplant was destroyed. Being my most complicated and delectable signature dish, with ricotta full of fresh basil and garlic, meatless sausage and spinach generously layered between pre-baked eggplant and marinara sauce and topped with swiss cheese. The curse has been lifted, and it tastes delicious.

A portable taste of fall: Pan-quiche pot-roast mash-up served on English muffin.  
Baked potatoes, carrots & onions in leftover beer and drizzled with maple syrup until tender and crispy. Then topped with thick cuts of fresh mozzarella and drowned in creamy beaten eggs with garlic. In the final moments, tossed on top maple kettle-korn style kale til crunchy. In the interest of easy, dishes-avoiding eating, it was served in squares upon English muffins. Full flavor, no place settings necessary.
